For over a decade, Vedas has been the gold standard of Indian cuisine in Shanghai. It's authentic food, friendly service, and exotic decor have made it a longtime favorite of expats — Indian or otherwise — as well as culinarily curious locals. Mumbai is a popular port of call and great place to start. For a taste of this bustling West coast metropolis, we recommend Vedas' Bombay Prawn Curry. Plump, juicy prawns are marinated in turmeric and yogurt before getting a long, slow simmer in a rich, aromatic curry stew. As is tradition in Mumbai, this unique curry is cooked with coconut milk, giving it a slightly sweet, tropical note as well.
The next stop is Chennai for a hearty portion of Chicken Madras. This dish is a staple of the capital city of Tamil Nadu State, where they like their curry a fiery shade of red from a mix of chilies, paprika, and turmeric. Rounded out with the sweet and sour flavor of tamarind pulp, it's a perfect pairing with tender chunks of stewed chicken.
The tour then spurs northward to the Great State of Punjab, famous for its meats roasted in tandoor ovens. To get the most bang for your buck, try Vedas' Mixed Tandoori Platter. It's a "greatest hits" of the restaurant's tandoori offerings like Chicken and Salmon Tikka and an assortment of kebabs.
Our journey goes further north to Kashmir for a taste of lamb Rogan Josh. A hallmark of the region, lamb is stewed in gravy of browned onions, and spices like cinnamon, cardamom, and clove.
That's four destinations, but you're tour doesn't have to stop there. You'll also find classics like Chicken Korma, Lamb Vindaloo, Goan Fish Curry, and an array of vegetarian specialties like Palak Paneer or Aloo Gobi. Then to cut through some of the spicy heat, you can wash it down with Mango Lassi.
